Yeast dough

1000 g flour

2 cubes of yeast

500 ml milk

covering

400 g Lemke Marzipan Simply Pure

4 eggs

2 tsp cinnamon powder

4000 g plums

100 g almond flakes

Topping

Almond cream caramel

200 g almond flakes

200 g sugar

1 packet of vanilla sugar

150 ml cream

Here's how:

  • Crumble the yeast and dissolve it in lukewarm milk while stirring.
  • Mix flour, butter, salt, sugar, eggs and yeast milk in a bowl until you have a smooth dough.
  • Then shape the dough into a ball and let it rest, covered, in a warm place for 30 minutes.
  • In the meantime, mix the marzipan with the eggs and cinnamon until smooth.
  • After the resting period, knead the dough on a floured work surface and roll it out onto a greased baking sheet.
  • Spread the marzipan mixture onto the dough.
  • Place the halved and pitted plums tightly on the dough with the inside facing up.
  • Sprinkle with almond flakes and put in the oven.

Preparation of topping

  • Lightly toast the almond flakes in a pan over medium heat, add the sugar and vanilla sugar.
  • When the sugar melts, remove the pan from the heat and add the cream while stirring.
  • Bring everything back to a boil over low heat.
